Writer's Block... Over


I feel like I have been in a blogging rut and disappointing all my loyal readers out there! So I am going to make more of an effort this time to tell you about what has been going on in Zach and I's life lately.

Zach has a big paper due Friday, so this whole week he has been studying and researching in order to get it done. He is doing a great job and the paper is almost complete. I can know start to notice the signs when he is seriously studying. Here they are in bullet form (for easy reading)
  1. When I come home the TV is off
  2. He usually will have papers all around him
  3. He doesn't clean at all (this is a huge one for him)
  4. He drinks about double the amount of Mountain Dew each day
  5. He doesn't look at his phone while at school AT ALL
The last one has a funny story attached. Yesterday while I was at work I was trying to figure out if I could get the family rate for GaGa (Zach's grandmother) who is coming into town this weekend. Well I texted Zach about 20 times throughout the day and he never once answered. I was a mix of concerned and annoyed. I figured he just left his phone at home. So as I am walking home I am totally over-working myself about him not answering and I start to freak myself out, like is he sick, did he OVER sleep (mind you it was 2:45PM) what if I find him like unconscious when I walk in. I basically ran down the hall to open the door and I realized that I was crazy. I didn't even tell Zach about it because whenever I do stuff like that he always says that I get it from my mother (because like me she does tend to think the worst- love you mom)

So while Zach has been studying I have been working, as usual. I have some new responsibilities at work. I am now training our intern, because in November when we are CRAZY busy they want to have someone who can help me out. So this takes up a lot of my time which is fine because I can use the extra help in November. Also the Conference Service Managers have been giving me a lot more trust. I think I have really started to prove myself to them, which is exactly what I wanted- to prove that I could handle more work. So they have started giving me their event itineraries and I have been learning how to create events and such. I really enjoy doing it and it's great practice. I feel like I am really making a difference at work, I am helping to lighten other people's work loads and such. So I hope that when we do my "Road Map to Success" (my boss' idea) That I end in a great high paying job!

In other news I have done a lot of cleaning and cooking this week. Everyone saw my dinner schedules and I have stuck to it. I found all of the recipes in a Martha Stewart magazine and here are the pictures and my brutally honest opinions about each meal.


Home-Made Pizza
So we made this last night- I must admit by day 3 I was really too keen to follow Ms. Martha so I made it more traditional style. The crust is homemade (by the Publix Bakery) Honestly best thing ever. Go to the bakery section and ask them for it and they usually keep it in the back. It is sooo good and only about $3. I also made the sauce home-made, it was so good but I wouldn't say that you need to do that every time. I just had like 10 tomatoes that I didn't want to go bad.
This was the BEST pizza ever. We split it in half and Z did cheese and pepperoni and I did cheese, sliced potatoes, onions and fresh jalopenos and let me tell you... SO good but it was so spicy I was crying! Ah.
This is where Juneau sits while I make dinner, just sits there and waits for treats :) SO cute!
This meal was Pork chops with Bacon and Cabbage along with these breadcrumb tomatoes. I had such high hopes for those tomatoes and they let me down. They had no flavor. On Sunday I cooked them for an hour and then I refrigerated them then I made the bread crumb topping and re-cooked them and they were just not flavorful.

I honestly can't even talk about the pork chops without wanting to barf. They were SO bad! I ended up eating leftover Dominos from the weekend. Ugh I won't even tell you the recipe I never want anyone to make these.

Monday Night we had marinated chicken and roasted potatoes. I liked the chicken but for how long it was marinated (overnight) I felt like it should have been more flavorful. The roasted potatoes were AMAZING though and Z loved them. I boiled them for like 40 minutes on Sunday then refrigerated them. Then on Monday I took a few and put them on a baking sheet and mashed them with my palm. I sprinkled with olive oil and salt and pepper and baked at 350 for about 20 minutes. They were great! Crispy and everything. We still have some that I am going to make for dinner tomorrow. Its a great thing that you can do ahead of time and eat all week.

Well I think that is about all for me. I am excited for the weekend and I only work M-R next week (because I have to work an event on Sunday)

So I am looking forward to a great weekend by the pool and next week will be so fun because GaGa will be here and we can eat out and hang with her!

  1. I have a really yummy way to make tomatoes that might be somewhat similar to what it was you were looking for with those breadcrumb tomatoes.

    Slice the tomatoes and then sprinkle them with mozarella cheese, basil, and a little olive oil. All you do is put them in the oven on broil for long enough to brown the cheese. I like them very much!
