Blueberry Muffins

Today was another day of a lot of nothing. I always have mixed emotions about these days. One I love that I have no responsibilities and can make blueberry muffins on a whim. But then reality crushes back down on me. I need a job I need to be making money and then all the fear and frustration comes back. So I try to keep myself useful. Today by cleaning the closet, making muffins, and doing laundry. That way I feel like at least I am being a productive member of this household. And it is a good chance to get things done that I may not have time to do if I had a full time job, like thank-you notes and scrap booking!

Zach got home around 4; Wednesday is one of his long days at school. He was pleasantly surprised by the muffins, but the realization that I am making food for 10 people and there are only 2 of us hit me! I also realized that I am turning more and more into a homebody I really don't mind not leaving the house.

Well I decided to make a Mexican Chicken dish I found on someone else's blog. So I needed a few little things from the grocery so Zach and I walked to Publix. Something I feel certain I will miss one day if we return to our lives back in suburbia. We even used the bag on wheels to carry the groceries, much more fun and better for the environment. When we got home I started cooking, something that I genuinely enjoy doing lately. It kinda hit me that once I have a crazy hospitality job with unpredictable hours that I hope I am still able to make meals for Zach and I. One of the unknowns in life! The Mexican Chicken turned out really well and Zach and I both ate it up :) So far we haven't had a bad meal, but I won't get too cocky.

I am also getting excited about this weekend. Hannah and Bobby are coming into town and I am so excited to have some friend interaction. I think that is the hardest thing for me is that I wish that we had friends to invite over for dinner and such. So they will be here Friday until Monday. Good thing dad left the air mattress, I can't wait for them to see the apartment we have been working so hard on it!

"What do you think about a palm tree?" This is the question that Zach just asked me! haha So I think that's my cue to go. Thanks for reading and enjoy the pics, blueberry muffins, dinner tonight, our bag on wheels and our apartment building!
